Darling Harbour is a buzzing day and night destination on the edge of the Sydney CBD, always alive with people visiting the popular waterfront restaurants, bars, activities, and landmarks including the National Maritime & Powerhouse Museums, Madame Tussauds, Sydney Aquarium & Wildlife World, the nearby Star Casino & Entertainment Complex and the Chinese Gardens. There are Fireworks every Saturday night and in early Winter there is the Vivid Lights Festival.
Your free-flowing Beverage Package includes Sangria, Champagne, Red & White Wine, Water, Juice & Soft Drinks (Tyrell’s Moore’s Creek Semillon Sauvignon Blanc, Brut NV & Cabernet Merlot).
Any other drinks can be purchased at the bar (Beers, Spirits, Cocktails, etc) or you can setup a bar tab. There is strictly no byo beverages permitted.

Cold Platter Menu (available anytime):
Fromage Board: A selection of hard and soft cheese local and from overseas. Includes Spanish Blue (Valdeon) Local Cheddar and French Brie (Gratin Dauphinois) served with Lavoche, Sourdough, Grapes, Strawberries, Dried Fruits drizzled with Truffled Honey / Mariners Mess: Crustacean delights of local Prawns (Crystal Bay), Tasmanian Oysters (St Hellens), Atlantic Smoked Salmon, King Fish Ceviche and Sashimi with Lavoche, Sourdough, Marie Rose Sauce, Champagne and Eschallot Vinegar and Wakami Salad / Posh Meats: Cured Meat display of Smoked NSW Soccer Ball Ham, Italian Salami and Black Forrest Prosciutto, served with Crispy Grissini/Sourdough Rockmelon and stunning house made Tomato Relish / Or for vegetarians we can substitute any of the above with a Crudités Board: Carrot, Celery, Cucumber and Capsicum sticks with Radish and Heirloom Carrots and Cherry Tomatoes, House made Hummus, Baba Ghanoush and Tzatziki, Local and Italian marinated Olives with local marinated Button Mushrooms and Halloumi.

3 Course Banquet Dinner Menu (available before 9.00pm only):
This pre-function Dinner Menu is available at the Watershed Hotel for an extra $25 per person (this replaces the Canape Menu).
Entrée: Cuban Potato & Pea Croquettes with a Tequila Aioli / Chilli & Lime Popcorn Chicken with Apple Slaw & Chipotle Mayo / Braza Cured Meats with house marinated mixed Olives & Pickled Mushrooms served with Sourdough.
Mains: Spanish spiced, whole Roasted Jerk Chicken / Char-grilled Bindari Scotch Fillet Steak with a zesty Chimichurri.
Sides: Chilli & Garlic thick-cut Chips / Mixed leaf Ensalada with Balsamic Vinaigrette / Spiced Sautéed Green Beans with Roasted Garlic & Toasted Almonds / Grilled Sweet-Corn coated in a Garlic Aioli, topped with Paprika, Feta & Coriander.
Dessert: Churros dusted in Cinnamon Sugar with fresh Strawberries, Vanilla Bean Ice-Cream & a Hot-Chocolate dipping sauce.
Dietary requests will be catered for.
There is no byo food permitted, with the exception of cake/cupcakes. A cakeage fee of $40 applies and must be pre-paid, so please advise us before your balance is due.
A Topless Waiter is included as your host and drink attendant.
Additional entertainment options include: Male Strip Shows / Female Strip Shows (for Gay Hens) / Life Drawing / Nude Magician / Burlesque Workshop / Drag Queen / Karaoke / Puppetry of the Penis / Flower Crown Workshop.
As an after-party you have complimentary nightclub entry at the Watershed Hotel next door with a Reserved Area and a glass of Bubbly for each guest.
Capacity: 35-40 people (for groups of 35+ we don’t recommend Life Drawing, Burlesque or Flower Crowns as they require more space).
A/V: Music plays through the venue’s inhouse speakers / No microphone available / A TV is only available on request that can be connected to a laptop.
Decorations: BYO decorations are welcome. However no decorations can be stuck to the walls or furniture. Blu-tac on the windows is ok. Any decorations must be removed after the function please.

Functions are 2.5 hours, but you can extend it to 3 hours for $15 per person subject to availability (we suggest 2.5 hours is sufficient).
If doing the 3 Course Banquet Dinner at the Watershed Hotel before the private loft, allocate 1.5-2 hours for dinner before the loft.
